As our food evolves, as seen by these recipes, the echoes of the old world remain, reverberating through our cuisine. This book is dedicated to home chefs and culinary entrepreneurs with a love for cooking and the spirit of experimentation. While most recipes here are mine, I am delighted to include food lovers with unique culinary backgrounds in this first edition: a Brazilian from Sao Paulo, a New Yorker from the Adirondack Mountain region, and a Korean-born American.
